INGREDIENTS
For 4-6 SERVINGS
200 g cod or scorpionfish fillet
100–120 g shrimp
8 cherry tomatoes
2 small zucchinis
½ garlic clove, optional
100 g breadcrumbs
1 tablespoon chopped parsley
About 3 tablespoons extra virgin olive oil
Salt
Pepper
Mixed salad to serve
PREPARATION
Cut the fish fillet into bite-sized pieces. Clean the shrimp by removing the intestinal vein and shell, leaving the tail. Slice the zucchinis into rounds and wash the cherry tomatoes. Prepare the skewers by alternating the ingredients on wooden sticks.
In a bowl, mix the breadcrumbs with parsley and chopped garlic, then add the oil, salt, and pepper. Pour the mixture onto a plate and coat the skewers evenly on all sides.
Place the skewers on a baking tray lined with parchment paper and bake at 180°C using the Specialista by Glem Gas Gratin function for 15–16 minutes.
Remove from the oven and serve the skewers with mixed salad.
