INGREDIENTS

DOUGH
½ cup butter, softened
½ cup coconut butter, softened
1 cup packed brown sugar
A pinch of salt
2 large eggs
2½ cups pastry flour (plain flour)
1 teaspoon baking soda
1 cup chocolate chips
½ cup chopped hazelnuts
1 tablespoon unsweetened cocoa powder
1 teaspoon ground cinnamon
1 teaspoon grated lemon zest
PREPARATION
DOUGH
In a large bowl, whisk together the softened butter, coconut butter, and sugar until creamy.
Add the eggs one at a time, mixing until smooth and creamy.
Add the dry ingredients and combine using a wooden spoon.
Using an ice cream scoop, portion the dough into 12 cookies and place them on a baking tray lined with parchment paper.
Slightly flatten the cookies with your fingers.
Preheat the oven to 170°C in static mode (no fan).
Bake in the center of the oven for 9–10 minutes.
